Jacques' culinary profile extends into every European city with Burgundy, Paris, South America, Spain and England being home to this well known chef. Melbourne appealed most to him and was where he chose to set down his roots and after working at Mietta’s.

With the use of French techniques, Jacques creates dishes of brilliance and sophistication. For over twenty years Jacques Reymond's Restaurant was voted one of the best in Victoria, winning the prestigious top awards from The Age Good Food Guide, being the only Restaurant in Victoria to win six times in a row.

The 2011 The Age Good Food Guide awarded them three hats once again. The Restaurant and Catering Association for Victoria 2011 awarded Jacques the Lifetime Achievement Award and also Best Restaurant and Best Fine Dining in Victoria. Jacques Reymond Restaurant was also a member of the prestigious Relaisand Chateaux.
In January 2014 after reaching the pinnacle of his career and receiving his 80th Hat, it was time to hand over the running ofhis restaurant Jacques Reymond. Jacques is now a highly sought after guest chef, consultant and ambassador of commercial events and products.

Michael Lambie

Lucy Liu Kitchen Kitchen & Bar, Melbourne

Michael Lambie is a culinary trailblazer. His career started at age 12, peeling potatoes, cleaning fridges and washing the greens three nights a week at his parent’s pub in Castle Mayne, Essex.

At 15, Michael moved on to an apprenticeship at ClaridgesHotel, part of a team of more than 80 chefs. His talent was identified early, and Lambie joined Restaurant Konigshofin Munich, then a two Michelin starred restaurant almost as soon as he completed his training. After a few years, he returned to London and the three Michelin starred Waterside Inn in Berkshire, working with the inimitable MarcoPierre White.

After working in Michelin star restaurants in Europe, Michael moved to Melbourne and opened Lamaros ‘Gastro Pub’ with business partner Pam Lamaros in 2007. This quirkie South Melbourne pub transformed pub dining in Melbourne and was an instant hit. The Smith followed in 2012 and since then has also opened Lucy Liu in Oliver Lane. “We have a great model with our restaurants. Nelly Robinson

Nelly began his career as a kitchen hand at the tender age of 14 at Michelin-starred restaurant Northcote Manor (UK), stepping into the kitchen at 15 full time to start his apprenticeship. Trained by chef patron Nigel Haworth and his team, including Warrick Doddsand Mark Burchill, Nelly was the first to complete an apprenticeship at Northcote. Nelly then worked around the world in more Michelinstar restaurants in the UK and abroad.

At 29, Nelly opened nel., offering guests a unique dining experience with an innovative flair. Well known for his role as nel. Restaurant’s executive chef and owner, Nelly has found his feet as one of Australia’s top chef personalities.

His attention to detail, especially when it comes to guest interaction, has earned him a loyal following of international and local guests. Nelly and nel. Have also been awarded #79 best restaurant in Australia in the Australian financial awards in there first year and also Nellyhimself has been voted in the top 300 chefs of the world by world chef awards and will be attending a awards dinner in Milan in October were he will find out his ranking, regardless a great achievement.
